PEPPER MUTTON SUKKA VARUVAL






Ingredients : 
Mutton / goat 1/2 lb 
Turmeric 1/4 tsp
Ginger Garlic Paste 1/2 tsp 
green chili 2 no
mint leaves  1 strand 
Red Chili Powder 1 tsp
Coriander Powder 1tsp
 Salt to taste

 To seasoning : 
Cinnamon 1 no 
 Coves 2  no
Cumin Seeds 1 tsp
 Fennel Seed 1/2 tsp 
Onion 1/4 no 
Tomatoes 2 no 
Water 1-1 1/2 cup 

For fry : 
Oil 3 tbsp
Garlic ( crushed ) 1 tsp 
 Black Pepper corns 1 tsp
Cumin Seeds 1 tsp
Curry Leaves 1 strand 


Directions:

                                            In presser cooker Add all  seasoning item onto  hot oil 




Add chopped onion,Mint leaves,green chilies 


saute well till it turns golden brown


Add Fresh Ginger Garlic  paste,Till raw smell off



Add  Chopped Tomatoes


Add all spices chili powder, Turmeric,Coriander Powder,gram masal



                                                                                      Add Curd





Add Washed  Mutton / goat



Add water 


keep 5 whistles or until the mutton is cooked well. 


Once Mutton done,Drain the water from the cooked mutton and Allow it to boil till all the water evaporates. 


In Iron Frying  Add our TO FRY items 



Add the mutton and fry till it becomes crunch dry in medium flame. Taste for salt and add if needed.  Stir often to avoid burning. 


                                                          Add Pepper powder




Finally Add More Curry Leaves 


Once its dry Mutton Turns Dark Brown

                                      Fish Curry -Meen Kuzhambu  INGREDIENTS Fish – ½ kg,medium size pieces Mustard seeds – 1 tsp Fenugreek seeds – ¼ tsp Cumin seeds -1/2 tsp onion – 1 Tomato-1 chili powder – 2 tbsp Coriander powder – 1½ tbsp Turmeric powder – ½ tsp puli/tamarind pulp  – 1/2 cup (Soak tamarind in half a cup of hot water) Curry leaves Salt oil Method:          Heat oil in a pan(meenchatti),Add Mustard seeds,Fenugreek seeds,cumin seeds,curry leaves             Add chopped onions  Cook on a high flame till onions are golden brown,Add Chopped Tomato,green chilies Add All spices turmeric powder,Chili powder,Coriander powder,required salt When oil separates add  tamarind pulp and Bring it to a boil               Add fish pieces and cook on a medium flame for 7-8 minutes with lid on or till the fish is done.           The fish will cook faster so be careful not to break the pieces,
