Ingredients:
To marinate the chicken:(Atleast for one-half (1/2) hour )
500 Grams Chicken Breast/thighs cut into cubes
2 Tbsp chilli powder
1 Tbsp coriander powder
1 Tbsp cumin powder/whole cumin seed
1 Tbsp Garam Masala/whole garam masal(cloves,cinnamon,cardamom pods,bay leaf,star anise pods)
1 Tbsp Ginger and Garlic paste
1/2 Tsp Turmeric Powder
1 Tbsp lemon juice
1/2 cup curd
Hand full of mint,coriander leaves
Soak 2 cups Basmati Rice for 1 hour..
Method:
Step 1:
Marinate the chicken first,add the chicken to a mixing bowl add all the ingredients given in the list and allow the chicken to marinate.
Step 2:
To Prepare Rice:
Boil 6 cups of water
2 Cups Basmati Rice
3 Bay leaf
1 Inch Cinnamon Sticks
3 Pods Cardamom
3 Cloves
1/2 Tbsp Black pepper
2 star anise Pods
Add all ingredients into boiling water with salt,once its start boiling add soaked Rice
Boil rice upto 75% ,it should break into two,once its done drain them
Heat sufficient oil in a pan, deep fry the slices of onion until browned and Remove
(For garnish and layer)
Step 3:
Heat pan add oil, all garam masal, mint,coriander leaves,layer marinated chicken
Add 75% boiled rice,mint,coriander leaves and fried onions.
Add Second layer boiled rice,Pour the saffron milk,repeat the same process,Ghee as required layer by layer and cover with a lid,Reduce flame and cook for 40 min.
Boneless chicken Dum biryani is ready.
