Dindigul Thalappakatti Mutton Biryani /Pressure cooker/Jeeraga samba Rice






Ingredients : 

Mutton - 1/2 kg
Jeeraga samba rice -2 cups
oil-2 tbsp
Ghee -2 tbsp
Green Chillies - 2 slit
Tomatoes - 2 large chopped finely
Ginger Garlic Paste -2 tbsp
Turmeric Powder - 1 tbsp
Chilli Powder - 1 tbsp
coriander Powder - 2 tbsp
Curd / yogurt-2 tbsp
Salt to taste
Coriander Leaves - 1/4 cup chopped
Mint Leaves - 1/4 cup chopped
Water - 2.5 cup
Onion - 2 large sliced thinly

Wash Jeeraga Samba rice  in water,Set aside.

 Biryani Spices :

Cinnamon Stick - 1 stick
Fennel Seeds  - 1 tbsp
Bay leaves - 2 no
Cloves- 3
Cardamom - 1 optional 
Star Anise - 1


Method:

                    Heat oil r ghee  in a pressure cooker.  Add Biryani Spices  




                     Add onions . Saute it till it gets golden color

 
                   Add Coriander Leaves,Mint Leaves and green chillies. 




Add Ginger Garlic Paste .saute it till Raw smell off



                                Add in tomatoes and toss well.




                    Add in salt, turmeric, chilli powder and coriander powder. Toss well for 2 sec in low Flame





                                Add Curd / yogurt,Mix Well



Add washed  Mutton and mix well. 



Mix Very well  



Add 2 Cups of water 




 Cover and pressure cook it for 7 to 8 whistle.  Turn the heat off, let the pressure go all by itself. 






Open the cooker and check if there is lots of water.If so put it back on stove and heat till it is reduced.




                                   Or  you can separate Mutton and its water for future use.. Like this

                                     Add in rice and mix well.




                                             Stir it very well




                 Add water(seperated water) into it,bring it to boil, pressure cook it for 1 whistle. Turn the heat off 




                              This how its looks Finally,Let them cool  down completely 




                                                       Serve Hot
